4 Easy Recipes for Summer

Summer is our planet’s most giving season. Here are 4 recipes to help you indulge in the benefits of the season’s fruits-and-veggie harvest.

Fresh Flavored Water

Instructions

  • Wash and cut your favorite fruits and vegetables. Chop or slice, up to you.

  • Add fruit or veggies in a glass or water pitcher less than ½ way.

  • Add ice. Top off with sparkling or flat water.

  • Enjoy right away, or chill for a few hours for a more robust flavor.

Your flavored water will last up to two days. However, it’s better enjoyed ASAP!

  • Watermelon and Strawberry

  • Watermelon and Cucumber

  • Strawberry, Lime, and Basil

  • Grapefruit and Rosemary

  • Lemon and Blueberry

  • Cucumber and Lime

Garden’s Bounty Tomato Salsa

Ingredients

  • 3.5 cups chopped tomatoes

  • 1 diced onion

  • 1/2 cup chopped green bell pepper

  • 1/3 cup minced cilantro

  • 2 tablespoons fresh lime juice

  • 1 chopped fresh jalapeño pepper (including seeds)

  • 1/2 teaspoons ground cumin

  • 1/2 teaspoons salt, or to taste

  • 1/2 teaspoons ground black pepper

Instructions

  • Lightly stir tomatoes, onion, green bell pepper, cilantro, lime juice, jalapeño pepper, cumin, salt, and pepper together in a bowl.

  • Enjoy right away or chill for a few hours.

Watermelon Slushies

What You’ll Need

  • 1 seedless watermelon

  • Blender

  • A shallow, airtight container

Instructions

The night before:

  • Chop seedless watermelon.

  • Blender until smooth

  • Pour into your shallow airtight container

  • Freeze.

Time to Eat:

  • Let thaw slightly

  • Mash with a wooden spoon or large fork

  • Spoon into cups and serve

  • For an extra touch, garnish with mint or lemon

Bowl of gazpacho soup

Fresh and Fab Gazpacho

Ingredients

  • 1 English cucumber, peeled and cut into chunks

  • 2 ½ pounds ripe tomatoes, chopped

  • 1/2 red bell pepper, trimmed and seeded

  • 1/4 small red onion, chopped

  • 2 garlic cloves, chopped

  • 1/3 cup chopped cilantro

  • 3 tablespoons red wine vinegar

  • 1/3 cup extra virgin olive oil

  • 1 teaspoon sea salt

  • Freshly ground black pepper

Instructions

  • Add cucumber, tomatoes, peppers, onion, garlic, cilantro, vinegar, olive oil, salt, and pepper into a food processor or soup blender

  • Blend until smooth

  • Season to taste

  • Chill for at least 2 hours
